Abstract:
This guide explores the gastronomic heritage of Santa María del Río, S.L.P., Mexico, from an ethnographic and cultural perspective. It examines cuisine as heritage and territory, focusing on rituality, geography, collective memory and cultural resistance. The book documents traditional foods, beverages, culinary practices, local ingredients and the knowledge of community members who preserve the living heritage of Santa María del Río. Its contents include gastronomic routes, the archaeology of taste, traditional celebrations, baking traditions, prickly pear, colonche, aguamiel, atoles, maize, confectionery, dairy products and other elements of the region’s culinary identity.
